Sanitary food plate heat exchangers are composed of a set of corrugated metal plates with holes in the plates for the transfer of heat through two liquids. The metal plate is mounted in a frame with a fixed plate and a movable compression plate on the side and is clamped with a clamping bolt. The plate is equipped with a sealing gasket to seal the liquid channel and guide the fluid to flow alternately into the respective channel.

The flow rate, physical properties, pressure drop and temperature difference of the liquid determine the number and size of the plate, the chemical properties and corrosion characteristics of the liquid determine the material of the plate and the rubber pad, and the different corrugated plate structure design improves the degree of turbulence, and forms many support points, enough to withstand the pressure difference between the medium.
The metal plate and the movable pressure plate are mounted on the suspension beam and positioned by the lower guide rod, while the rod end is fixed on the support column, but if one or both liquids pass more than once in the heat exchanger, the interface should be opened on the fixed plate and the movable pressure plate.
